Title: Blueberry "cello"

So decided to try a different fruit variation on my limoncello (I got a batch of limoncello going too, but decided to try something else to boot).   

18 oz of blueberries, 875 ml of 190 proof everclear, sitting for about 10 days.   I knew going into it that it would be a little sweeter than the lemon, so I decided to do a few taste tests with different amounts of sugar in the simple syrup.

Ended up settling in on a 3/4 strength simple syrup.  And after letting it age for a couple weeks, decided to see how it's going....  Honestly, it needs something.   Even cutting back the sugar, it's still too sweet.   It's not bad, just... sweet.   Flavor is good, but it's off balance, so it's not as enjoyable to drink.  If I do another batch of blueberry, I may try one of the things I saw suggested, which is adding basil to the blueberries while they steep - gives it a little more of a balance to the flavor. Or maybe something else - not sure....   But the blueberry flavor itself is really good.    We'll see how it's tasting in another couple weeks.

Could also make a batch with no sweetening and then blend it until you get the right proportions, then sweeten whatever unsweetened mix was left over (if any) to match.
