Title: Root beer butt smokin

pulled pork
I bought 2 nice fresh bone in pork butt roasts on sale.
Coated all over with fresh squeezed lime and let sit in a pan in the fridge overnight.
Rubbed all over with olive oil and yellow mustard then covered with an ancho dry rub and allowed to come to room temp while I got the charcoal fired and the pit barrel ready. Apple wood for smoke.
Placed on grate at the top of the barrel and lidded. Turned meat frequently and sprayed with root beer w some lime juice and a little cider vinegar added.
Slow smoked for 5 hours with a little brown sugar added last hour until it had a good bark rind all over, the bone was loose, and the brown sugar caramelized.
Double wrapped in foil and poured rest of the root beer over them before I sealed them up and put them back on for another 2.5 hours.
Let them sit for 30 minutes in the foil.
fell apart and almost shredded itself when unwrapped.
Coated some new potatoes in olive oil and wrapped in foil and dropped them on the coals in the bottom of the pit barrel to have with it.
Yeah it was pretty damn good

Worked!

Recipe sounds great. Was the root beer anything fancy or does it matter as it's just getting cooked off anyway?

No, just a can of root beer that’s been in garage fridge for a year or more.
Forgot to add that I also used a Carolina style bbq sauce after it was on the plate.
Taking the rest of it to a family reunion today.

That sounds good!

I use sodas on my pork butts also, but lean towards Dr. Pepper or Cheerwine. I find injecting that product adds a lot, and I also spritz during the smoking.

On sale agin. 2 more smoking tomorrow!
I think I'll do everything the same but try to char just a little more bark this time. Maybe Hickory instead of the apple.

I don't have a smoker but that sounds delightful. I have decided the only two ingredients one needs for slow cooker pork is Dr. pepper and Sriracha.

The pit barrel cooker is simple and easy to use. Kind of a slow cooker slash smoker. 5 pounds of charcoal and a couple pieces of wood will last 7-8 hours.
