They talked about using Choice brisket.  My last brisket was a Prime from Costco, and at a better price than my previous Choice briskets I bought from a local meat market.

Funny to see somebody called him out on his original process ("punted").  I like the Test Kitchen videos on YouTube, especially product reviews.

Attempting brisket on a charcoal kettle grill is an exercise in futility.  The bullet water smokers are even worse. Temp inconsistency is the death of proper smoked  meat.

That being said,  this resource is solid if you're new to brisket.
