Title: Rabbit recipes??

I've got 3 fresh rabbits, bought from the 4H auction.  I've never cooled a rabbit, any of you have ideas?  As of now, they're going in the smoker and we'll see what happens but I'm open to trying a recipe someone can vouch for as good.

Braise, stew or fry but I have never thought of smoking. I think they may dry out pretty bad when smoked. Maybe do them on a pellet grill if you have one.

I think there is not enough fat in a wabbit to make the smoker be the choice.

I’ve got an awesome recipe if I can find it. Pan fry with onion and butter to brown and then put in slow cooker with mushrooms leeks and a cheesy cream sauce.

BobR-  I'm concerned about that,  but I found a couple of sites that say it's ok to brine rabbit, so that's happening today on the first one.

French G-  Wife and I both like your recipe,  will try that tomorrow and report back.  If you're close I'd donate bunny #3 for your attempt.

Kingscreek-  By all means post if you can find it, sounds good.

Charby-  Thanks.  The pot pie idea sounds good as that's my wife's side of the kitchen.

So brined, pecan smoked rabbit is an absolute success.  Juicy, tender, and tastes sort of like pork.  I made a brown mushroom gravy for jaegerschnitzel and was going to use it on the rabbit but didn't need to. 

Sour cream hassenpfeffer is on deck for next week.

My favorite is fried with mashed potatoes and gravy. I did an awesome recipe in the Dutch oven one day I will see if I can find that.

All of mine are wild so it is what I have on hand to go with them.
