Yeah, shame he couldn't get it ready in time for me to take a pound camping yesterday. That would've made the damp (ok, sopping wet) weather bearable. Tongue

Even more the shame that the last two times I've done this it's tacitly been "US" doing it, yet I'm the one doing all the work and staying up tending late the freaking smoke! Tongue

Mike, it may seem like a ways to drive, but I've got a dead pear tree you can come cut down and have for fire/smoke wood.

Burgers' thick-sliced pepper-coated bacon makes my mouth water just thinking about it. Wonderful flavor.

They sell hams in City, Southern, Ozark, and Ozark Attic versions, with different amounts of saltiness, dryness, and flavor. They also sell prosciutto, German Bavarian, and German Black Forest hams.

OK, I'm eating some of it right now.

It's OK, but I prefer the last batch I did using a Wilshire curing method. It had more flavor, and wasn't quite so salty. This will need to be pan rendered when it's cooked.

Still, nice flavor.
