Okay, so it sat down in the basement for quite a bit more than 40 days.

There was no mold or anything on the lemons, so it should be safe to drink, right.  It is alcohol after all, anything that would have tried to start growing should be dead.

Right?

As long as it doesn't smell off, I can't imagine it would be bad per se. Nothing would grow in it, especially if you went with a higher proof alcohol.

 I make a batch every year, using Meyer Lemons.  I have never had a problem with it being 'drinkable'.  Smiley
