Diabetics: Low Carb Alternatives

Since being diagnosed as "pre-diabetic" this Summer, I've been trying hard to lower my carb intake as much as possible.  To take things up a notch in the low carb area without resorting to living on steak, bacon, eggs, and salad before it is processed by the cow (trust me, it gets old after a while), I've started looking into the various alternative recipes used by LCHF and Paleo adherents. 

I use this site for low-carb recipes:

From that site, I've tried:
https://www.dietdoctor.com/recipes/lchf-pancakes-with-berries-and-whipped-cream: more like crepes, but good.  Will not replace a regular pancake.  I fixed another batch this morning, but added a tablespoon of coconut flower to a 3-serving batch and blended it with a stick blender to get rid of the cottage cheese lumps.  The result was almost identical to french toast.  Next time I'll try a bit of vanilla.
https://www.dietdoctor.com/recipes/coconut-porridge: tasty.  I added some hearty oats to give it some texture, but still much lower carb than normal oatmeal.
https://www.dietdoctor.com/recipes/cauliflower-hash-browns: I used riced cauliflower and sweet potato (Green Giant brand from Walmart) because I had it on hand.  I like these better than potato-based hash browns!
https://www.dietdoctor.com/recipes/keto-hot-chocolate: Not bad, would be a good non-coffee hot drink in the winter, but not the hot cocoa your brain is expecting.  Needs more cocoa than the recipe calls for and a splash of cream (I used heavy whipping cream).

What "alternatives" do you guys have?
