Corn bread casserole recipe...

Pulled this from a friend.

I've had similar before, and man is it good.

1 and 1/3 cup all purpose flour

1 cup yellow corn meal

1/4 cup plus 2 Tablespoons granulated sugar

2 Tbsp baking powder

1/2 teaspoon salt
(or use two boxes of Jiffy corn muffin mix)

2 sticks unsalted butter melted

16 ounces sour cream

4 eggs (if using extra large eggs, use 3)

1 can cream style corn.

Mix together and place in 13 x 9-inch pan sprayed with non-stick cooking spray. Bake in preheated 350 F. oven for 45 minutes.

My family's version of that cornbake recipe:

1 Box Jiffy Corn Muffin Mix
1 Stick Butter (melted)
1 can cream corn
1 can (drained) corn
1 cup sour cream
2 eggs

Bake 45-50 minutes at 350°

So, fewer eggs, less sour cream, and less butter. (And more corn) It's still amazing.

Of note, if you use a glass pan you can melt the butter in the pan in the microwave and use the melted butter to coat the pan before mixed everything else in.

Wife just made one tonight for a picnic tomorrow but not going to wake her for recipe. It had bacon and pinto beans and other things in it.
Sometimes we carry more weight then we owe.
And sometimes goes on and on and on.

Well, keep trying and maybe, just maybe, you'll be successful someday.

But, were I you, I'd get used to feeling like the Buffalo Bills and Philadelphia Eagles when it comes to earning Superbowl trophies...

Been out of town for a few days. I'll try to remember to ask her one evening this week. We have to go to one of Sadie's robotics things tomorrow so maybe Wednesday we can be at home.
