Smoked, deviled eggs

So my co-worker got a Traeger pellet-fired smoker/grill from Costco. Big buck item and it weighed over 400 lbs. Transported to his house via my pickup and a couple hernias =D
Anyway, he was raving about smoked eggs. I did some today along with a rack of pork ribs and some "Country-style" pork ribs. All over hickory smoke.
Smoked, deviled eggs are *excellent*. Very impressed. Not worth firing up the smoker for just a couple eggs but if you are going to be smoking other stuff, throw a dozen peeled hard-boiled eggs in there, for about 1/2 an hour @200-250* hickory smoke. They will turn very brown. A couple of them were a bit rubbery, so maybe *slightly* less time

Kiddo processed the yolk filling: Gulden's brown mustard, a little mayonnaise, cracked black pepper, a bit of Penzey's BBQ rub, and Old Bay.

When I do smoked eggs I just put the uncooked eggs in the smoker with the other stuff, about 2-2.5 hours and they come out perfect. Peel and use.
