What's For St Paddy's Day?

I was going to be lazy and just get a "buy and bake" Shepard's Pie from Costco, but mine didn't make them this year. I ended up getting a hunk of corned beef for corned beef and cabbage. I just put the meat in the oven. I'm experimenting with a mix of ideas from several online recipes, taking a little from each one, so it's a gamble today.  :laugh:

The corned beef is going in the oven at 325 deg inside a dutch oven with a bottle of Guinness poured over it. In about 90 minutes I'm going to throw in some chunks of potatoes, carrots, and onions. Separately in 2.5 hours or so, I'm going to put a mix of seasoned taters, onions, and cabbage all with a light coating of olive oil in a separate cast iron pan and stick them in the oven for an hour or so to roast, in hopes of them and the corned beef all getting done at the same time.

If I would have gotten up an hour earlier, I might have made some soda bread too, but I was lazy, so just the meat and taters today.

I'm deciding if I should wash it down with Guinness or Red Breast. :)

I'm smoking some corned beef briskets and Mrs. Mush is making Colcannon Potatoes.

I'm just drinking the beer I had on hand, which is a couple local FL brews,and a variety pack of Sam Adams

I am getting out of cooking today, I am prepping for my 5 year visit to get rotorootered tomorrow. All things considered I would rather be eating. :(

Well, that turned out pretty darn good. The meat pretty much fell apart with a fork, and I liked roasting some of the taters and veggies on the side vs throwing them all into the beer broth.

I went with the Red Breast.

Sausage and American fries (Left over baked potatoes from a fundraiser last night, sliced and fried in butter)

I made a corned venison roast from a doe I shot in January, wife said no to cabbage, so I'll save that for when she leaves town.

I'm 1/4 Cornish, the wife is half Irish.

I made smoked corned beef and smoked butter/bacon cabbage.  The cabbage was excellent, the corned beef was a bit more salty than intended.

Next year I will probably just do a conventional smoked brisket.

The wife made pasties.

I started curing it the day after i shot my doe. Cured for 14 days, rinsed and boiled it. Froze it for St. Pats but wife poo pooed boiled cabbage and roots.

For some reason, Mrs. fistful started making Irish stuff two weeks early. I don't like corned beef and cabbage, so she made a Dublin coddle, beef & stout pie, colcannon, soda bread, and a chicken & leek pie.

We refrained from our tradition of watching Irish Jam, but she did make Irish Jam bars - just like in the old country.

That sounds moderately good... I've always liked Rice Krispy treats... That might be a good addition.
