Turkey in the smoker
« on: August 03, 2019, 09:46:49 AM »
8lb bird, not brined by me (is a "tender bird" so prebrined). Rubbed with brown sugar, paparika, salt, pepper, etc rub. Smoking in hickory.

Should be done in 4-5 hours. Bringing it to a celebration of life party (the after funeral party) today at the brewery.

My biggest Dolly dressed out at 31.33lbs.  Not sure how I'll cook it yet.

I have a couple wild turkey breasts in the freezer, I'm going to make one in pastrami.
