Turkey soup!

Not really soup season yet but I had a turkey that had to go from eating feed to being eaten. I am most excited because the only thing not from my yard was the rice, two spices, and salt. Now I get to eat it for two weeks.

Turkey
Carrots
Parsnips
Celery
Garlic
Sage
Coriander
Tarragon
Oregano

I loves me turkey soup... One of my favorite applications for the post holiday carcass.

This is the only time I haven't started with a cooked carcass. I took the leg and thighs as quarters and breasted the thing. A quick and dirty job, probably 2lbs of meat in the soup as a result.

Nothing wrong with that. I've roasted wings and necks to make stock.
