Key lime pie recipe

I was able to score a bottle of Nellie and Joe's key lime juice, which is actually hard to find in this area.  I love a good key lime pie.  Does anyone have a better recipe than the one on the back of the lime juice bottle?

I have used this recipe a couple of times and it is really good. I just use the zest of  regular limes or delete it all together. I prefer to go find some limes and zest them.

That's the one I make if I can only get juice. I mean its a custard pie, so it eggs and dairy plus the flavoring.

If I can get key limes I do a blender lemon pie, but with equal amounts of key limes instead of a whole lemon.

^^^That is really interesting with the blending up of a whole lemon.  My first thought was the bitter pith, and then as I read further down, they recommended a small lemon exactly for that reason. I have made an orange olive oil cake that called for grinding up a whole orange, and it was pretty good.

I've made several lemon pies from various lemons, I have yet to have a bitter one. I do quarter my lemon to remove all the seeds and the blossom/stem ends.

I have made a Shaker lemon pie, with the lemons sliced paper thin, macerated, and then layered in a pie shell.  But then again, I will eat a lemon slice/quarter whole, peel and all, to the horrified looks from the wife and kids.

Taking a spoon full of lemon marmalade also horrifies people too.

So the recipe I just made:

A graham cracker crust

14 oz. sweetened condensed milk
2 whole eggs
2/3rd cup Nellie and Joe's key lime juice
The zest of one lime
The squeezed juice of one lime

Mix all together and bake at 350 for 10 minutes, and then chill before serving.  It is chilling outside right now.

I will report back on how it is.

I don't think Nellie and Joe's is really key lime juice.  Does the label say "key lime juice" or does it say "Key West lime juice"?  AFAIK, there are no key lime orchards in Florida.  (I guess the limes could be sourced elsewhere and processed in Key West, then they could be key limes or Persian limes, or some mixture)

It's a good product, but I think you can substitute fresh Persian lime juice without losing anything.

Yes, I know that.  The ping pong ball sized limes are called "key limes", not "Key West limes"  So I don't know if they are selling the real thing or not.  Maybe they are.  The label is ambiguous.

I went and looked up the key lime tree, got a sketchy history. Originally from Asian and probably a cross of three different citrus plants, brought to Spain by the Arabs and Spainish brought it to the North America.

Having phone issues, cannot get linking to work.  There is a guy on YouTube, Andrew Rea, who does a cooking show called Binging with Babish.  Long story short, he cooks food from TV/movies as depicted, then in the best way possible.  Anyways, he has a Key Lime pie recipe I used a couple of months ago which turned out awesome.
