Title: Crockpot Recipes

Gonna start this so they are all in one place.

And in honor of Lawdog's book release, here's his Texas Chicken Soup/Stew

In a skillet:
1 med onion - cut however you prefer from diced to 1-2 inch long pieces.  Saute'd until translucent.
2-4 Chicken breasts - cut into bite sized pieces and browned in a skillet.  Add to onions.
(At this point I like to add about 1/2 a packet of taco seasons and 1/3 cup water to help deglaze the pan.

Straight into the crock pot:
1 Can Kidney beans
1 Can Chili Beans
1 Can Black Beans
1 Can Rotel (or equivalent)  ( I also add a can of fire roasted tomatoes, gives it a good flavour kick)
2 Cans of Corn (Drained) or 1 bag of frozen corn for less salt.  
1 Can of Chicken broth (leave out if you want more of a stew than a soup)
1 packet of Ranch Dressing
either the remaining 1/2 packet of Taco Seasoning or a full one.

Once the chicken and onions are done, the pan deglazed, and the liquid cooked down a bit, add everything to the crockpot.

Cook on low for 4-6 hours.

Serve in a bowl with Corn Chips on the side.  (I like the Dippin' ones, on a plate, with shredded cheddar cheese melt into them in the microwave.)

Sour Cream and Shredded Cheddar Cheese to taste.

No offense, but that looks awful.  I might try it just to see...  (I don't see how anything "Texas" could be made with chicken breast.  Leg quarters or turkey legs,  maybe)  I do give it a few points for the Fritos. ;)

3-4 lb chunk of whatever dead critter you have laying around. I've tried it with boneless chuck roast and pork shoulder. Both were delicious.
1 package au jus mix
1 package ranch dressing mix
1 stick butter
6-8 pepperoncini peppers (optional, but very tasty)
Fresh ground pepper to taste

Dump it all the in the crock pot, meat first. Cook on low for 6-8 hrs.

HEY! You copied my recipe from the Mess Hall recipe thread, you just changed the gravy mix and put the butter on top instead of under the meat!

The only crunch I like in stew, Texas or otherwise, is chips, not bones... ;)

Actually not Texas but rather Canadian. Note the spelling of "Flavor" as "Flavour."

Hands down the very best recipe for au gratin crockpot potatoes I've ever come across.

Got the recipe from my GF. She has a stack of internet recipes laying around so I don't doubt she probably peruses the same sites as your SWMBO.

I haven't tried the recipe yet; I just saw it in the Star Tribune and saved it:

American Legion Funeral Hot Dish
(Colette Flynn, owner of Catered by Colette in St. Louis Park, MN)

5 lbs. ground beef
1 large onion, chopped
1 (16-oz.) bag frozen sliced carrots
1 (16-oz.) bag frozen cauliflower florets
1 (16-oz.) bag frozen chopped broccoli
1 (50-oz.) can of cream of mushroom soup
1 (50-oz.) can cream of chicken soup
1 bunch celery, chopped
1/4 cup soy sauce
1 tsp. white pepper
3 (12-oz.) bags chow mein noodles

Fry hamburger and chopped onion in a large cast-iron pan, breaking it up into small pieces with a potato masher. Place in a large roaster. Mix frozen vegetables, soups, chopped celery, soy sauce, and pepper in a bowl. Pour into roaster and blend with meat. Fold in two bags of chow mein noodles, cover, and bake at 325 degrees for 75 minutes. Remove from oven. Sprinkle remaining bag of chow mein noodles on top. Put cover back on and bake another 15 minutes. Serves 50.

In first grade I went to an old school. Lunches were catered in from the high school. One very warm fall day we had macaroni salad.

Several hours later, about 98% of the people in the school -- students, teachers, staff -- come down with projectile vomiting food poisoning.

That was going on 50 years ago, and I still remember that smell.

And I still have problems eating macaroni salad.

Wouldn't see why not.

One of those things saved Thanksgiving for us a few years ago. I recounted it here, but just as the stores were closing, the bottom unit in my Mom's oven burned out. My brother and I rigged the top unit to sort of work as the bottom unit, but it was not ideal.

Then my sister in law made an off-handed comment about wanting to get one of the roaster ovens because their new stove was backordered several weeks.

20 minutes later my brother and I were back from Walmart. Roasted a 20 pound turkey to perfection, with the exception that the skin didn't really get brown, as would be expected.

That thing came in very handy over the next several years.

Roast the turkey with the breast up, then when it's done use a heat gun to brown and crisp the skin.  Works perfectly.  You don't even have to thaw the bird first, it just takes an hour or so longer to cook.
