Title: 3 Bean Soup

I just made this and I'm sharing it so I can remember the recipe.

4 carots, sliced
2 celery stalks, sliced
1 small onion
Olive oil (or bacon grease)
Chopped cooked bacon. (1-2 slices)
Chili powder (1 tbsp)
Dried parsley  (1 tbsp)
Dried basil (1 tsp)
Rosemary (1 tap)
2 Bay Leaves

3 cans various beans (drained and rinsed)
4-5 cups water
3 cups chicken broth
1/3 - 1/2 cup pearled barley

Add oil to pot and cook carrots, onions, and celery (let carrots cook the longest.)

When they are softened, add spices, water, broth and beans. Bring to boil, then lower heat and simmer 1 hour.

Remove bay leaves and discard. Take 3/4 cup beans and 3/4 cup liquid and puree in blender. Return puree to pot.

Add barley, increase heat to boil again and cook till done, 10-20 mins.




I'm estimating most measurements as I tossed it all in as it looked good.

I used pinto, black, and butter beans (I put the butter beans in at the same time as the barley) because that's what we had. The butter beans were a surprisingly good addition.

This was very tasty and all my children loved it. Would go well with some cornbread.
