Okay - a little too much honey syrup to the quantity of bourbon. A little strong on honey flavor, a little weak on bourbon flavor. I shall adjust, and eventually communicate proportions.

Okay... First attempt was about 16 ounces of water with 12 ounces of honey stirred in while warm. Added to a litre of Old Crow... Theory was "why waste good whiskey."
 
Result: Weak, overpowering honey taste.

Added approximately a fifth of straight Old Crow to approximately 1/2 of the original mix. MUCH closer to the Beam or Turkey versions, but has a bit of a whang to it from the cheap bourbon.

Will still figure out a way to consume it eventually.

Next attempt will likely involve a handle of Beam.

My thought would be to add a little honey to an Old Fashion glass of bourbon. You could adjust by the glass rather than screw up a full liter.

Is the water necessary?  I thought honey would dissolve in whiskey -- eventually.

Hmmm . . . now you've got me thinking about my grandma's recipe for krupnikas, Lithuanian honey liquor.

I remember her using honey, a LOT of different spices, and 190 proof grain alcohol.

It was medicinal - it really was. Even if it didn't actually cure you, after downing a good stiff shot of it, you didn't care about being sick any more.

Perhaps because you are drinking it cold, but without diluting it with ice?  (that's my theory) :)

The honey settles... Doesn't do it in the store-bought versions...

More observation - The honey/water solution settles, leaving enough of the honey flavor in the upper part. Was playing with funnels and water bottles...
 
I think I'm going to try to pour it off, in a couple of different attempts.
 
Gonna try better whiskey on the next go-round. Or just buy a handle of the Beam Honey. That'll probably last me through Spring. Or at least Valentine's Day...

Hmmm...

Probably like so many store things there isn't real honey in it. I have the yeast in the fridge, about to light off some mead with my spare honey. Pondering distilling it and back sugaring some if I want a honey taste.

The honey was allegedly "honey" and nothing more. Most of the recipes I've seen say to make a syrup, and add that to the whiskey. I dunno. Not feeling like a repeat yet.

I would probably either make a syrup using honey and boiling water, and mix it when it cools with overproof bourbon (like Wild Turkey 101.)  Or dissolve the honey in a little hot 80-proof whiskey and then mix that with the rest.  Ultimately you want about 70 proof, right?

I've never had the stuff, other than homemade Jack Daniels, honey, and lemon juice cough syrup many years ago.

I just have my doubts that the store liquors have much real honey. As for old Crow don't you have any car parts you can clean with it?

So tired of crap alcohol we had a re-gifting around here and set a bunch of partial bottles next to the freecycle dumpster.
