Who had corned beef Saturday? More importantly...

how did you cook it?

Oven, stove top, slow cooker, grill?

I always wait to have my corned beef after St. Paddy's because the unsold ones are on sale at a nice discount.

I normally stock up on them. I have one left over in the freezer, and intend on getting 2 or 3 more.

Generally I like to cook them in my pressure cooker. 50-60 minutes and they're done.

Mtnbkr did one on his BBQ some time ago and it turned out really well. I want to give that a try.

Stove top, and it was most excellent, with Irish potatoes and cabbage.  We're Scots-Irish and my wife's maiden name is McDermett.

I'm Welsh.

I used my Welsh longbow to bag a leprechaun.

I then roasted it at 350 deg. F until magically delicious.

Corned beef brined with pickling spices for several hours, carrots, potatoes, cabbage and one cup of Guiness all roasted in a covered Lodge dutch oven at 300 for three hours.

Did two on the stove top.  Simmered around 2 hours.  Tossed in potatoes for the last bit.  Netted around 5 pounds after trimming fat and slicing.   Boys are about two pounds Saturday, and I got an awesome sandwich for lunch today.  Corned beef, rye bread, Swiss cheese, and good mustard is one of my favorites.

When I used to be able to eat beef. I would let it get a crust at room temp, rub dry mustard on it and bake. Serve with boiled cabbage and spuds.

Wife cooks ours in Crock-Pot. She gets the corned beef from Sam's and it's pretty good

I'm heading to the store over my lunch break. I'll check out and see if they have any on sale now that St. Drunky's Day is over.

I had some in cold-cut form on Sunday. Saturday was bangers and mash.

We had ours on the 15th. It was my wife's birthday and that is what she wanted.

I baked it covered at 325 for 2 1/2 hours then uncovered for 45 minutes. Pulled it out and tented it and made up some roasted potatoes and Brussels sprouts at 425 with a balsamic reduction.

Made her a pineapple upside down cake baked in a 10" cast iron pan for dessert.
Sometimes we carry more weight then we owe.
And sometimes goes on and on and on.
