Shrimp soup again
« on: December 28, 2019, 07:54:27 PM »
I made my annual pass at shrimp soup again for Christmas. Best yet I think, the original concept is my dad started making shrimp bisque some years ago. This year was a bit less of a bisque, still a roux and plenty of cream and butter but I also had Fred, our Costco whole salmon so I cooked his remains for a fine stock. I went vegetable heavy, somewhat a mirepoix, somewhat a cajun trinity, neither all the way since I am cooking around an onion allergy. So a ton of carrot, celery, orange and red bell pepper, parsley, dill, and garlic all finely diced and gently butter sauteed not to caramelize. Two pounds of wild shrimp and a pound of pacific oysters. Clam juice, port, old bay, and sriracha all involved. Recipe? What's that?
