Jaternice for breakfast tomorrow. I have a Czech meat locker in one of the towns I work in, so I get some fun sausages from time to time. This is a 1/2# bag of loose Jaternice, it very similar to scrapple. Meat scraps, grains and spices. This package says pork snouts and pork hearts, I told me wife it was a fired pork meatloaf as I was bringing it from the deep freeze to thaw.

Their headcheese is to die for.

It's just over 70 miles away.  I could do that...    The bologna looks really good.  I've never had headcheese; if I'm gonna try it someday, I should try the good stuff :)  Does the jaternice have liver in it?

I don't think theirs does. I'll double check the package when I fry it up.

Headcheese is really tangy flavored, I like it as part of a sandwich with other meats. It's held together by gelatin, so you have to eat it cold. If you have ever had a Vietnamese sandwich, headcheese is one of the meats.

For those wonder what it's like. Well pan fried it is crunchy, soggy and greasy all at the same time, definitely has a rich pork flavor from the tongue meat. 1/2# goes a long ways (3-4 servings), but it is good served with a couple OE eggs on top.
